As a college student in Southern California, I became quite well acquainted with acai and pitaya bowls. Well… more accurately, quite addicted. Acai bowls are basically super thick smoothies, blended to the consistency of sorbet and served in a bowl, topped with chopped fruit, granola, nuts, coconut, honey, chocolate chips, or whatever your heart desires.
We would pick them up as a post-beach day lunch, or just whenever we had a craving (which was often). The frozen fruity treat was a favorite, and when I moved out of California and found that there were no acai bowls to be found in my little east coast town, I suffered my first real heartbreak.
Well, not exactly – but I was incredibly disappointed. My favorite food, nowhere to be found! So I figured it was time to roll up my sleeves and make my own using ingredients I already had in my kitchen. Thus, the Superfood Smoothie Bowl was born.
I added chia seeds to my bowl for some protein and healthy fats, as well as some supergreens powder for an extra health bonus. If you don’t have a supergreens powder on hand, you can easily pop some fresh spinach or kale in if you want to add some greens!
