So, necessity is the mother of invention, and all that jazz. Well, it’s true! I was at a friends house one afternoon for a playdate. As the kids ran around and generally destroyed the house, she kindly offered snacks. She explained that she was running low on Avocado the other week and needed to make a batch of guacamole stretch for a large group of people. No time for the grocery store, she had to improvise. Wondering what she could do to make the recipe extend a bit further? She tried adding in Greek yogurt! You bet. It worked, fabulously. Now she wouldn’t make it any other way, and had whipped up a fresh batch for us to enjoy.

Simple and Easy Guacamole With Greek yogurt.
3 Avocados (peeled, pitted and mashed)
1/2 cup diced tomato, seeds removed
1/2 cup diced onion
2 T minced fresh cilantro
Juice of one lime
Dash of sea salt to taste
2/3 cup plain, zero percent Greek yogurt
First, mix together your mashed avocados and greek yogurt. Once combined, add in all the other ingredients and stir together.Serve immediatly with tortilla chips.
