Ever wonder what ‘fit’ people eat? If you think it’s grilled chicken, broccoli and protein shakes – think again. We’re here to fill you in a little secret – we eat and drink WELL. Now treat yourself to this easy, delicious and hearty meal perfect for busy week nights!
Everyday we are exposed to new diets and trends that make big promises. From low-carb, paleo, ketogenic, vegan, low fat and more, eating for fitness is not a one-size-fits-all. And it certainly doesn’t mean avoiding the foods you love.
I’m a huge fan of mindful eating. For me, that means eating what I want within reasonable means. Do I eat pizza every single day? No. But I’ll definitely have a few slices (or 5) on a Friday night if that’s what I want! Instead of focusing on how much I eat, I pay attention to what I eat. At the end of everyday I’ll ask myself:
- Did you eat fruit today?
- How many vegetables did you have?
- What was your grain?
- Did you have healthy fats?
- What was your protein intake like?
- How much water did you drink?
Based on my answers, and what workout I did that day (if any), I’m able to identify which areas need improvement. Yesterday was a pretty light day for me, so I decided it was time to cozy up with one of my favorite favorite foods – pasta. Because who doesn’t like carbs? Plus, the cooler weather here in Chicago was making me crave something warm and hearty.
This one-pot sausage and broccoli pasta is a huge hit in my household. It’s rich in protein, has a healthy serving of whole grains and veggies, and is packed with savory flavor. I think my favorite part is having leftovers for the rest of the week – perfect for packed lunches!
Want to keep things even lighter? Swap the sweet Italian sausage with ground turkey for a low-fat option. Avoiding wheat or gluten? You can absolutely use a gluten-free substitute. These quinoa noodles from NOW Foods are my favorite! Omit the sausage completely and use vegetable broth instead of chicken for a vegetarian option!
