Now that school is back in session and fall is approaching, the laid back summer lifestyle is coming to an end. Summers are nice for enjoying smoothies and lighter fare, but you might be ready for something more substantial.
What I think I love most about eggs, apart from the fact that they are a low cost protein and taste amazing, is that they are perfect for breakfast, lunch or dinner. And paired with veggies, they make a super nutritious meal. Eggs and spinach is one of the best combos and the addition of feta is icing on the cake. I’ll be honest, there was a time when I was completely obsessed with the spinach feta egg wrap from Starbucks. It was probably the one time in my life that I spent money on food outside of the home and I literally craved them everyday. After concluding that spending $10 a day (very slight exaggeration) on a breakfast wrap and fancy drink wasn’t the wisest use of my money, I started making them myself.
Spinach is an amazing vegetable that should be a staple in your diet- it’s got a great nutrition profile, is low in calories, easy to find, has a fairly decent shelf life for a vegetable and the best part, it cooks so quickly!
Cooking spinach with eggs it’s really easy because the spinach only takes a couple of minutes to wilt and there is minimal prep work involved (you can give it a rough chop or just toss the leaves in whole). You can even add it raw to an omelet and the heat from the eggs will basically take care of the rest.
When it comes to wraps, it’s hard to find a “clean” one so make sure to look for preservative-free tortillas or make your own. Stuff them with some scrambled eggs, spinach, mushrooms, tomatoes and feta or feel free to add in any vegetables you have on hand.
