Between work, errands and maintaining a household, it’s hard to find time to cook nutritious meals. That is why I love chicken salad. It’s healthy, simple, and can be prepared with just a few ingredients. It’s also extremely versatile! I’ll add spices when I’m in the mood for a kick, or tone it down with cool veggies like cucumber or celery for a mild flavor. Busy for the next few days? No problem. Chicken salad can be refrigerated in an airtight container for up to one week.
