I’ll have to admit, I didn’t come from a meatloaf-eating family (or rather I may have been a typical kid and didn’t think too fondly of it, but I have given it a chance in my adult life and I get it. I get why it’s a popular comfort food. It’s a big hunk of meat, slathered in ketchup, kind of like hamburger meets meatball. And it’s actually pretty tasty!

Not to worry, we’ve fixed the problem and turned this into a easy weekday meal by making mini meatloaves instead of one large one, therefore shaving off more than half of the cooking time. These little meatloaves are THE perfect thing to make for meal prep over the weekend and keep in the fridge/freezer for a quick-fix meal. And there is major wiggle room in this recipe to make it your own. Fresh parsley or dried herbs like oregano make an awesome addition. Some people like parmesan cheese in there, or extra veggies like shredded carrots or diced bell pepper.
To make this a healthier option, we’ve traded the typical ground beef for lean ground turkey and by adding an extra egg to the mix, we are really bumping up the protein.
