EAT COBB: Eggs Avocado Tomato Chicken Onion Bacon Blue Cheese
I just learned this clever trick for remembering the ingredients in a Cobb Salad using the EAT COBB mnemonic! Although I’ve seen lots of variations on the Cobb Salad, such as using ham instead of chicken, using different cheese, etc. this is the classic combo. And I’ll be honest, it’s hard to beat! I am honestly not sure which ingredient is my favorite- eggs, avocado, bacon, chicken….how can you go wrong? I’ll never forget taking my 4 year old to the grocery for the first time to pick out his own lunch and he choose a Cobb Salad. He was so excited about it and I was totally shocked. He brought it home, lifted the take-out container and gleefully dug into his first grown-kid salad. Even now, he gets excited when he sees things like eggs and bacon in a salad. I read that the original Cobb Salad dressing was a red wine vinaigrette which is one of my go-to dressings, although you can definitely substitute a creamy blue cheese, ranch or whatever you like. It had been waaaaay too long since I have had a good Cobb Salad and this one did not disappoint. In fact, I think I have to make it again asap because it was just so satisfying. I made a basic red wine vinaigrette using heart-healthy olive oil and since you don’t need to dress the salad until you eat it, the leftovers stay nice and fresh. That means you can make this all for yourself AND enjoy it for a few days! Here is what you need minus the lettuce!
