In my experience there’s no middle ground for most people when it comes to veggies. They either love ALL THE VEGGIES or avoid them at all costs. In my family, I fall into the former category, with my other three family members in the latter. This makes things interesting.
That’s why I jumped at the chance to search out recipes that covertly feature veggies cleverly disguised as brownies, muffins and more. These recipes feature ‘hidden’ veggies and some legumes for good measure. In this post, you’ll find creative ways to sneak in ingredients like:
- Sweet potatoes
- Spaghetti Squash
- Garbanzo and Black beans
Mom was right, you need to eat your veggies, and so do your loved ones. The recommended daily amount is between one and three cups a day, depending on your age and sex. To see where you and your loved ones fall on the scale for servings, check out this chart from the U.S. Government. The benefits of veggies in your diet are far reaching and you can read more about them here, just in case you need a bit more motivation to sneak in some veggies.
