This is one of my favorites, easy to make and really quick if you happen to have precooked brown rice.

 

Healthy Fried Rice

 

Ingredients (Serves 4)

 

  • 1 tbsp vegetable oil
  • 2 cloves garlic, finely diced
  • 4 green onions, finely diced
  • 1 tbsp peeled and diced ginger
  • 4 cups cooked brown rice
  • 3/4 cup diced red, yellow or orange peppers
  • 2 cups edamame, cooked
  • 1 cup frozen corn
  • 1 cup julienne carrots
  • 1 package cubed tofu
  • 2 larges eggs, beaten
  • 3 tbsp soy sauce

Instructions

Heat oil in a large skillet, add garlic, ginger and scallions and cook for 1-2 minutes

Add in rice, peppers, edamame, corn, tofu, and carrots and cook until heated through, around 5 minutes

Make a well in the vegetable and rice mixture and pour beaten eggs in. Stir the eggs in and cook thoroughly.

Add in soy sauce and cook for an additional minute.

    This recipe sounds delicious! As a busy university student going from lecture to gym I’ve been searching for some recipes that pack a lot of flavour into a short space of cooking time, so this is perfect! I’ll be sure to try it this week! Thank you :)
